Vaillons Vieilles Vignes Chablis 1er Cru Chardonnay

Not bad but super dry acidity even after 6 years and just not fleshing out enough for me.

Laser beam, high acid, pushy tart fruit on the front end. Needs warmth and air to mellow it out. After a decant it really emerged. Crisp orchard fruits, meyer lemon, crushed oyster shell, kelp, tarragon, struck flint, damp wild mushrooms. So fresh, literally tastes like it was put in the bottle yesterday, not 6 years ago. I love the acid, my molars do not.

Lovely. Mature. Lemon. Oyster shell.

This is a good wine, but not a great one. A tad too much wood for my palate. A lot of acidity. The 2017 Alain Geoffroy Chablis 1er Beauroy is a much better wine which we had a few days ago.

Decent, not great. I was hoping for more. When young this had searing acidity. The acids have mellowed, but seems to lack fruit.

Pleasant but lacks complexity.

This is a more restrained, austere style of Chablis. Very mineral and saline. Enjoyed with deconstructed California rolls.

Citrus, tart acidity, very linear
