Went on a cellar tour at Mumms in Reims (pron: “rahnce”). Held on to a chateau only bottle until at Place du Trocadero near the tour Eiffel. Chalky, dry but crisp. Chilled for one hour and opened for 10 mins per the chateaux Somm instruction. Spectacular way to spend a Sunday.
