Popped and poured; enjoyed over the course of two days. Best on Day 2. The 2021 Graacher Domprobst Spätlese (White Capsule) pours a day bright, light straw color with medium viscosity. On the nose, the wine is developing with powerful notes of tropical fruit: star fruit, passion fruit, lemons, petrol, rocky minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long with tongue smacking acid and minerals. A cracking pairing with lamb massaman, larb and papaya salad. Drink now with some patience but better after 2026 and through 2041. Beautiful stuff.

White cap. Trocken. What a wine. Molitor’s 21’s are just incredible and have so much acid. Really slatey nose. Lime zest and rock candy. Airy and breezy. Palate is so brisk and has terrific minerality that has texture and grip. Some lime and green apple fruit and super juicy but this is a high acid wine and I am here for it. After 19 hours open this is soaring aromatically with huge slate and lime zest. Palate is juicy and concentrated with sweet lime rock can’t and immense power and concentration and such insane vivid fruit. A brilliant wine and what a finish. 9.4 to 9.5.
