This “sus scofa” is sourced from two organic vineyards in Panedés. Hand harvested and destemmed, with spontaneous fermentation in stainless steel before 4 months of cement aging. A vinification meant to showcase absolute purity of fruit. Job well done. This is adult cherry coke. The nose was cherry, a touch of funky saddle, and a hint of floral. The palate showed bing cherry soda pop with a nice acid lift. It is pure and delicious juice. It made me want to go for a burger, wash it down with this and then go play some arcade games.

I would love to try this at a restaurant right there in the village. Or the winemaker’s home. So curious to see what food pairings would hit the table.
