Excellent white Burgundy from up-and-coming micro-négoce by Japanese expat Seiichi Saito. This comes from Saito’s own tiny 0.1 hectare plot in the Boutières lieu-dit in Savigny-les-Beaune, farmed biodynamically. Fermented with indigenous yeasts. Aged in neutral oak for about 11 months. Unfiltered, unfined. Lively nose with aromas of Meyer lemon, yellow apple, pear and apricot. Medium-bodied, textured, mineral. Lots of green apple in the palate. Delicious 😋
