Philippe Jambon
Une Tranche Fleurie Gamay
Yah, 3rd bottle I've had from Bauchet, and I'm still not sure what I think. I can only say I drink them fast, which means they're chuggable, which is a good thing, I think. Perhaps it's the combination of ripe fruit with tannin that's combined with carbonic maceration and brettanomyces that confuses me, it's altogether in one wine whilst I'm used to separation between at least 1-2 states. I'll admit to liking it and being curious enough to want to try more, but I doubt I'll ever crave it in some moment of desire or pairing of food. Undoubtedly it would pair with some food, but perhaps that food would be just as confusing... feel free to add your opinions of you've tasted this.
