Rymill
Coonawarra Cabernet Sauvignon
Light and lithe as far as cabs go. The eucalyptus note really burns your nose in the proper way—it’s mint to your ripe fruit salad. Tannins are on their way to knitting themselves in. And hand-harvested by koalas! Not really but I very much want to imagine koalas picking wine grapes. Apologies if I am objectifying...

Sep 6th, 2018Brooding black currant, cedar, eucalyptus, dusty dark chocolate, grippy tannins. An animal hint on the nose. There’s a dark, elegant richness that’s neatly structured. Still years ahead of it.

Nevertheless, this is exactly the cabernet I felt like drinking tonight. Young enough to be vibrant, with just enough time in bottle to create some intrigue. It’s concentrated and luscious with a dusty cocoa thread. The nose tends towards savoury with some nutty, woody and fragrant leafy notes, while the palate offers elegant black fruits, some herbaceousness and a little menthol. Rather delightful.
