Sparkman Cellars
Holler Columbia Valley Cabernet Sauvignon

At first a little tight and acidic, but decant and the wine opens beautifully😀 The Nose has notes of dark cherry, blackberry, cassis, and cedar. The taste blackberry jam, red currant, and earth. Perfect with our Gorgonzola burgers👍

Better the second day it was open (we put it in the wine squirrel). Little tight for the first hour or two then started to open up. Better with food.

More approachable than my last bottle. Fine but firm tannin. Red and blue fruit. A little gamey on the nose, pepper on the palate with a savory note (bay leaf?). A delicious wine.

Really tannic out of the gate. Need to let it breathe and soften a bit. Two hours in it's slightly softer. It's got great balance and complexity.
