At 45 minutes decanted the herbaceous austerity begins its inevitable yield towards eucalyptus and menthol. Simultaneously the skin of the fruit gives way to its flesh. I wish I could taste this wine intravenously.
At 90 minutes in there's a moment of clarity where the theme starts to appear -- it's never in the same place and yet sure of itself -- it's constantly evolving and yet there's a clear identity. It's elusive, on purpose.
At 2 hours open it's difficult not to feel the inspiration... the blue to red to black fruit lens is on full display against a backdrop of stunningly gorgeous and mouthwateringly savory tapestry of mint, cocoa powder, fresh herbs and spices. This is Mark Porembski at his best.
