I love a good blanc de noirs. It has a depth and complexity of a Pinot noir red wine yet the freshness and elegance of regular champagne. It has mysterious minerality that I love and mixes well with a French cheese plate but could also hold up to a chicken dish. Never had it with a salad but I think it would be excellent!
