Nose has mashed blueberry, sliced black cherry, wet soil, wet leather, black currant leaves, roses, syrup of dark fruits and damp peppercorns.
Palate has violets, blueberry/black currant juice, fresh black cherry, (light) moist spice cake and ripe elderberry. Persistent tannins prove this wine is still youthful, with a long/rich finish and juicy fruits on display. In proper storage this can easily be enjoyed, 2025-30+.
Cork pulled for a slow oxidation of 5H then decanted 4H.
We're big advocates of Burgundy wines paired to Asian-style food, tonight again with Taiwanese Five Spice Pork (Lu Rou Fan | 卤肉饭) over Jasmin rice with lightly fried eggs from our private egg factory in the backyard, plus locally raised NY pork (Highland Farm, Old Chatham, NY). The wine displayed its youthful tannins alone, but great acidity with the meal pairing. Happy happy! — 4 years ago
