Tasting Notes:

Elegant and balanced with restrained aromatics, a smooth, polished texture and subtle sweetness and umami. Clean, balanced finish.

I underestimated this one initially. As the evening progressed, I appreciated its balance more, particularly compared with the next three bottles served to the table, which were noticeably sweeter. A more restrained and composed sake that held up well alongside the meal.
