This wine is so different compared to its youth. I remember a lush, jammy, sexy wine full of cassis, dark fruit and vanilla. Now it carries some nuance. Sous bois on the nose with cedar, tobacco, leather and dried cherry. I prefer the young and slutty version but this is really delightful nonetheless. While it also showed extremely youthful the ‘07 was on another level and IMO had shed more tannin than the ‘06. It was my last sip of the night and it was plush and beautiful and rounding out incredibly. Potential high 90’s wine in 10 years. Thank you @Matthew Beckman — 6 years ago
Paired this 07 with mesquite smoked baby backs-what a great pairing. I find that Paso Wines can get sappy with age. Not the case here. Fruit is integrated well and not over the top...pink peppercorn and kirsch on the nose, with blackberry preserve and hint of wild game paired with super fine tannins makes for a stunner. — 5 years ago
