Tanuki cider. Newton pippin single varietal. Turning into one of my favorite California cider companies. So clean but with enough complexity and funk to make them very interesting. We’re sitting outside of Buvette in February and the late afternoon sun is shining; this calls for bubbles! The “Saint-Thierry” Extra Brut #16 is a single vineyard blend of Chardonnay (90%) and Pinot Meunier from the 2016 harvest. Popped and poured, no formal notes. Significant and persistent mousse. Golden apples, peach, lemon, brioche with chalky minerals and fabulous acid. This reacted very well to air; gaining weight and complexity. Long, zippy finish. Disgorged January 2021. — 2 years ago
