He’s sweating, and lightly peppered. Grilled apple, eel skin, dried black currant, dried roses, rawhide, marinated plum, and a tart persistence that is neither graphite, or smoke, but something similar with a dry-rubbed saline-sweetness in the mix. Delicious!
