Top Notes For
Tart cherry, tobacco smoke and a hint of candied rhubarb on the nose with a slight vegetal undercurrent. I aged this for a few years and while the tannins are still gripping and prominent, they’re well integrated, with a deep rose colored hue, medium to big body and tart cherry, pomegranate juice, underripe strawberry, tobacco, and a long, gripping acidic finish. Those tannins do not quit though and leave the mouth feeling tight for minutes after. Paired with slow cooked pork adobo, but honestly could be better paired with a more savory pork or beef.
