Aug 24th, 2020These are 2011 grapes, disg in March 2017 with 5 g/L dosage. The bubbles are strong to begin, so if I were to do this again, I would either give this a few years or a decant...or just let it sit for a while. Notes from 4 hrs open. On the nose: pure chalk, followed by lemon oil...slathered in minerality. With vigorous swirling, a touch of sawdust. On the palate, fantastic acidity paired with excellent depth: lemon oil, a suggestion of custard, good salinity and soft mousse lifts these flavors. A very nice, complex style.
