Strong Haut Brion from 2001. Opened about an hour before the steak course arrived, by which time it developed an more intense but a very pretty nose of black fruits, cedar, some tobacco and herbs. The mouth feel was good and stood up to a grass fed ribeye steak. 2001 isn’t a standout year but it is good shoulder vintage.

On doit lui laisser 1-2 heures dans le verre pour que la magie s opère. Un nez de fromage au départ qui c’est volatilisé pour laisser place à un grand vin complexe!
