Didier Dagueneau
Pouilly-Fumé Sauvignon Blanc
Amazing sauv blanc. Bracing acidity, huge minerality, dried hay, lees contact, lemon caramel custard, full mouthfeel for sauv blanc, and baked apple on the finish. Very complex. Yum!

Jun 11th, 2016Funky leesy nose but some serious varietal fruit to back it up. Decant this, lent the sherry-ish funk blow off and see how it evolves through the night

May 2nd, 2016This ended up being a little lean for the sushi dishes. The glass of Gruner veltliner we had to begin being a better match. The poully fume showed greenish lemony notes with slight caramel nuances from the oak. Needed a richer spicier wine like the Gruner. 2008 vintage. Fabulous 2 Hat Michelin Sushi Taku in Tokyo.
