Per Bianca of PBB: The first tank is comprised of whole-cluster Alicante that is crushed and macerated for 3 days, while the second tank is whole-cluster Alicante that undergoes carbonic maceration for 8 days. The combination of these two tanks results in a balanced wine that offers all the bruight, juicy and fruity notes of a carbo wine and all of the stemmy crunchy notes of whole cluster grapes. Spontaneous fermentation with indigenous yeaste, then the wine ages throughout the winter in an iron tank, bottled unfined and unfiltered, with only 10mg/L added at bottling.

Faire Avec is a true summertime food wine. Dusty tannins, earthy with tinges of ripe black and blue fruits, a subtle grip that would go great with anything on the grill or in a smoker. It's a picnic wine for those who prefer to drink something with a little body, and a dinner-on-the-terrace wine for those who want red wine with their meal.
