Light straw gold. Much lighter than the younger Kistler, which is a good sign. Floral nose. Notes of citrus, river stone, white flowers. Later in it adds a bit of honey. Big impact in the mouth. Nice balance of fruit and fine acidity. This bottle is still on its way to get better with more age. Great showing.

Feeling Lucky?

Despite the premox issues plaguing these early 2000s Fèvres, I held on to my 3 bottles for proper aging. My bottles were going to hit their prime drinking window or die trying

DAY1
Served with the Vinloq System
Golden color. No browning
👃Honeyed pineapple, citrus, jasmine tea
👅Where r the oyster shells and minerality? Oily texture. Nice. 9.1 pts

Stored the bottle in my fridge with Vinloq Preservation

DAY8
👃Aromas change with each sniff
👅Buttery, spicy citrus. Slate minerality. Feels <17 yrs old. Complex. Finishes dry & salty. DAY8 better than DAY1
9.2pts

I am 2 for 2 with no premox! 1 bottle to go and I am feeling lucky 🍀

my favorite Chablis climat, this is an intense wine that belies its age. Minerals, menthol, fruit in the background, acidity, all the tastebuds jump to attention when the wine enters the mouth. This wine needs more time, amazingly enough, though the paucity of fruit paradoxically augurs for drinking earlier rather than later.

Super fresh. Classic Chablis profile. Rich and balanced. Not super complex, but very drunk blankets.

A very good Chablis!!! Medium gold with aromas of apple, mineral, spice, floral , and yeast. Flavors of apple and oak with a nice finish. Very good and well balanced. Not a cheap bottle, but definitely worth it.

This held up! The nose delivered some promise that the palate couldn’t quite pay off. But I kept detecting beautiful things around the corner. Guessing this might just be a year or two past its prime. No oxidation at all. Coravined initially and found the finish to be quite long. I think maybe its first 30 minutes were its best?

Probably a bit past though I can’t vouch for the storage conditions. Full bodied, a bit fat imo.
