You're not allowed to say it of course, but the word that springs to mind on sniffing this is "minerals" - river rocks, salt and slate (perhaps a yellow flower, too). It's dry and relatively austere, the slatey palate inflected with pear and apple leading into a limey finish. A bit more time to soften and round out probably wouldn't go amiss.

Beautifully developed for something so young. Upfront quince and mineral, with peach, lemon/lime, and plum skin. Incredibly floral: orchid, rose petal, honeysuckle, and gardenia. Honey and chamomile.
