In a dessert wine mood this weekend, this Elephant Island Winery Cassis is delicious and tart. Not your typical wine. At the winery I was told that once opened, it will hold for 6-8 months in a cool dark place, I’m guessing the 16%alc helps with that. This stuff is definitely a sip casually for dessert type wine however, but since it’s supposed to stay good for quite awhile after opening, you can afford to keep cracking it for a little bit every so often. Feel like this stuff is definitely not everyone’s cup of tea though, my father described it as “liquid candy.”
