Night Eyes Sparkling Apple & Cherry Mead

A seriously delicious experiment in fermentation. Fresh, funky, kaleidoscopic red fruit and honey aromas are deftly balanced by a streak of lactic/citric acidity in the mouth, perfumed with rose hips and enlivened by delicate tannins. The whole is greater than the sum of its parts.
