This cab just didn’t taste like a cab: bold or tannin heavy. I like the concept of low sugar and low carb, but in the cab something was just missing. Maybe the longer fermentation process to burn off more sugar also changed the boldness associated with cab Sauvignon. Would recommend for someone counting calories, but not if you want those tannins with your red meat.
