L'assyrtiko è sicuramente un uva poliedrica che si adatta ai terreni e muta faccia e carattere col terreno su cui è coltivata, le note tipiche di agrumi si mantengono, il corpo e la struttura non troppo importanti, la mineralità aiuta la beva e il bouquet in questo caso si arricchisce di spezie, di zenzero e di noce moscata. Una buona esperienza gustativa per un vino figlio di un isola, di un vulcano, del sole, del mare e del vento.
