Heitz Cellar
Napa Valley Cabernet Sauvignon
Merry Christmas (a little late). Decanted for just over two hours to get the flavor right. Paired well with roasted rack of lamb.

Dec 29th, 2021Reached back in the cellar for this one. Classic older Napa cab from the heyday of this winery in my opinion. Holding up incredibly well, this has everything you’d expect from a cabernet with 20+ years under its belt. Just fantastic.

Mar 13th, 2021Cork split about 2/3 of the way down, but wine bled maybe 10% up the cork. Poured VERY DARK to the glass. The initial nose was raisin and plum.....crap. The nose was the same. Gave this one about 15 minutes and it was a completely different wine on the palate, but the same on the nose. Wasn't for about 30 minutes that it started to really change. Turned into a surprisingly youthful, ripe fruit dominant wine with some very slight secondary notes...little bit of fig, some leather, hint of plum and mushroom. Very deep in the middle. Surprisingly youthful depth. Finished WELL. Seemed to have some chalky tannin on the finish at first but then was very rounded as it warmed to room temp. Dehydrated lavender and pink rose petals along with black cherry, blackberry and rhubarb. I was REALLY impressed by this wine tonight. I hesitate almost to give this one a 97, but it wasn't quite there. If you have a few of these and haven't started drinking them, drink them with about an hour decant or hold for 2-3 more years.
