Dec 21st, 2019I’ve said it before and I’ll say it again, Champagne may be the best wine pairing with the traditional Thanksgiving meal and this NV from Paul Dethune was sublime. Pulled from the fridge and opened about 30min prior. Straw colored with an impressive mousse. About as affable as they come with a bouquet of white peaches, magnolia blooms and a whiff of brioche. On the palate it was stone fruits, citrus and minerals. Every bite of the meal begged for another sip and every sip begged for another bite. What a delight.

May 15th, 2015This grower Champagne from Paul Dethune opens with pretty, almost coquettish aromas of alpine strawberry, cherry crumble, roses and the merest hint of earth. And while the Pinot stands out—it should it's 80% Pinot Noir and 20% Chardonnay—prolific bubbles lead into an unexpectedly intense, tensile acid spine that arcs and releases into chalky repose. The finish is consistent with the nose, cherry skins, pink grapefruit and vanilla. Disgorged June 2014
