Cuvée Sublime Demi-Sec Champagne

Aromatic Buddhas hand & lemon balm & buttercup flowers, cake frosting, sponge/fairy cakes... Actually pretty bloody delicious and refreshing. Ample acidity, perhaps too much for the weight... Its a good little demi-sec....

With the average NV Brut clocking in around 11 grams of sugar per liter of wine you'd expect this demi-sec to be downright cloying at 40 gms/liter. But it's not - it has lovely balance with ripe apple and citrus fruit and sufficient acidity to balance the sugar. It is rich, to be sure - that's the point - but it works surprisingly well. Good with foie gras and salty cheeses and for the neophyte who finds extra -dry too harsh. Not versatile, but definitely worthy

Its like putting your foot inside of a slipper, you expect the soothing but it doesn't hit you yet. You have to give it a tic in your mouth. Then your eyes open and all you can say is yes! Pears are slamming down the door on this wine.

Good weight and some sweet ripe notes in the middle.

Awesome with fried chicken!

Sweet champagne with a hint of vanilla. Much improved when paired with a dessert. Had with black cherry clafoutis.

Very fine with a fig and foie dish. Sweetness and acidity nicely balanced.
