White Springs Vineyard Dry Riesling

A pre-dinner bottle while we do meal prep tonight.
Prior notes still apply:
Nose has lime zest, lime juice, green hay, wet granite/limestone pebbles, oxidized green apple peel, polyethylene tubing and tangerine peel.
Palate has Key lime flesh, cold tangerine slice, apricot skin, wet-pulverized limestone, lemongrass, tangerine zest, (minor) dried apricot and light honey on the medium finish, medium acid, great balance.

These are night 2 notes. On night 1 it was showing a lot of fragrance but was shy on the palate. Just the opposite on night 2: nose shows shy but pure notes of crisp apple, underripe peach, and slatey minerality. But it’s got nice roundness and intensity in the mouth, with a nice, user-friendly balance of minerality and fruit. Dry, but not in a demanding way. Very nice. (Thanks to my brother for this gift bottle!)

Decanted 3H, double-decanted into the bottle, then cooled for service.

Wine #5 from my mixed case of Finger Lakes wines. I love the wines coming out of Ravines. This Dry Riesling from the White Springs Vineyard is absolutely delicious with notes of ripe juicy green apple, citrus, white peach, fresh cut green grass, lemon verbena and limestone. There is definitely some residual sugar here, but the medium plus acidity balances it out nicely. Cheers!
