Per Bianca of PBB: Mtsvane is an aromatic grape and one of the oldest known vinifera varieties, and after extended maceration and a long oxidative vinification in these large clay vessels, the bouquet transforms from lychee and apricots to unsweetened honey and spiced baked pears. The Shavi Kravi Mtsvane smells sweet like marmalade on the nose, with hints of tea and spice as well, but the taste is quite dry and tannic. Not tannic like a big red wine, but tannic like you ate a raisin with a seed in it. It's a gorgeous copper color in the glass, and could go with any rich and creamy dishes. It's young yet powerful, so I would defintiely recommend drinking this like a red wine with a slight chill on it but not too cold; the tannins can be super overpowering if served too cold, and the aromatics are much more present when served at a warmer temperature!
