Idaho and bubbels?! Yep! There is Hailee, co-owner and winemaker at 3100 cellars in Boise who makes only sparkling wines using the traditional method. She is kicking a.. and taking names. This was one of the three wines we brought to see what works best going ‘hotspringing’ in Idaho in the winter, snow covered, icy. . It was this sparkling Mouvedre Rose that was the undisputed winner. As we of course had to share with our neighbors in the pool whose party we had to crash to take a dip, it was unanimous. Full of sass, uplifting mineral flavors and all so nuanced and balanced. The name 3100 Cellars? There are 3,100 miles of navigable white water rivers in Idaho and several go by hot springs 😂. Check out our Instagram to learn how this day turned out. — 9 days ago
Nice easy drinking Syrah. Distinct earthy inky notes only Charles Smith can reflect in his wines. Learned it perfectly pairs with Kerrygold Dubliner cheese 👍👍👍 — 17 days ago

Well this was the shock of the year for me. We had this exact same wine back in October 2023 with our friends overlooking the Fumina valley in the Tooronga Mnts of Gippsland, Victoria, Australia. I rated a 10!!! Top of the top. Couldn’t be better. This wines launched me into orbit and it took days for me to come down. So, with such great anticipation we thought to close out a phenomenal year with another bottle. It was intense, it was super grippy, layered… but the fruit had gone and to me it was totally unbalanced. How is that possible??!! Is it me, is it the wine, what could it be? Oh well. So many more wines to explore. Happy New Year everyone!! — 8 days ago

What a pleasant wine. Still rich in flavor like one expects from a Shiraz but the flavors were nuanced, verfined and fresh. Despite 10 years in the bottle. — 16 days ago

Nice vibrant super Tuscan. Medium body, bit racy. — 18 days ago

Checking out hot springs in the backcountry of Idaho. What better than to bring your gun…. Gun Metal Riesling that is!! From down under Barossa Valley. Hewitson. Dean Hewitson, everything he does is great. Including the Riesling. — 8 days ago
We had the battle of the Shiraz at our family gathering over Christmas. A Shiraz from South Australia and South Africa. Both 2016. This Shiraz, despite from the Adelaide Hills where I think it is a little cooler, was very rich, very bold and broad and a slight jammy note on the edge perhaps. People liked it, but all the votes when for the Shiraz of Cederberg from South Africa. Fun!!! — 16 days ago

Precision wine. Pure and focused. Fine grained, polished tannins kept the wine centered on the palate and carried the dark red fruit infused flavors to a soft landing on a lingering finish. — 17 days ago

Dark earthy fruit infused with a bit of spice and… brett/barnyard. Went well with my sister-in-law spaghetti 🤓 — 18 days ago

We have been drinking this wine for 10 years now. As the fruit drops out it becomes more stringent with strong oak tannins, losing some of its depth and ease of drinking. — 6 days ago
