Valmur Chablis Grand Cru Chardonnay 2014

Quite light straw . Very complex and taut on the nose , with crushed shells , touch of honied citrus fruits , gun flint , green apple , camomile . On the palate this is very mineral and intense with chalk dust and citrus , apple peel , really long and mineral . Good volume but really excellent balance . Perfect fresh acidity, and saline mineral intensity on the finish . Really young still but so good at the moment , though will continue on like this , probably improving for a further decade at least . Restaurant Drouant , Paris . — a year ago

Constant notes, this one has a more muted nose at first then opens up to a mineral stony profile, light pastry aromas, honey, buttery slightly and very Chardonnay like. A very smooth, and creamy palate with great tension, vivid and intense, yet finesse, class and elegance are there, very small and tight bubbles, long delicious finish with that irresistible mixture of energy and class. 93-94

Notes constantes, nez plus discret au départ que la dernière bue il y a quelques semaines mais le nez ouvre sur une belle minéralité, brioché et très Chardo en style, fruits blancs, un peu miellé et beurré. Bouche crémeuse avec une acidité appuyée tout en étant d’une finesse, d’une classe et délicatesse indéniable, bulles très fines tout en étant delicatement crémeuses, une finale assez longue avec cette énergie et classe irrésistible. 93-94

Nez de fruits rouges, des épices, nez qui évolue pour le mieux, aucune verdeur, bouche avenante, puissance et finesse ici aussi, encore une belle acidité, bel équilibre et longueur. Difficile de départager 2006 et 2011. Légère préférence pour 2006 au départ mais à la longue, pas certain, 2 beaux vins. 94-95

Nice nose of red fruit, spices, nose that gets better and better in the glass, power and finesse also, balance and length are grand cru level. Hard to say which one I prefer vs 06.

Red Bordeaux Blend 2006

Blend of 65% Merlot and 35% Cabernet Sauvignon. Interesting wine based on the fact that age has really mellowed it. Nose features violets, asphalt, Forrest Floor with a note of dark cherry/cassis fruit. Dark berry fruit is muted on the pallet with hints of dark chocolate. Soft tannins on the medium finish. Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.

The 2012 is living up to its reviews. It’s good & well priced. The dark fruits are ripe, juicy, cola notes, menthol, dark, moist, turned earth. Drinking nicely now but, still a hold for another 5 years plus.

Served with Coq au Vin. Baby Carrots, Mushrooms, Pearl Onions & Red Wine Sauce. Mathilde French Bistro

The Coq au Vin was my favorite for tonight. It paired wonderfully with this wine. Worth having a meal @ Mathilde if you come to SF
