Pop and pour. A striking medium gold color. On the nose: wonderful aeromatics of apple, honeycomb, floral, lemon, almonds. Taste: lean, waxy, balanced mouthcoating wine with tart apple, saline, lemon rind, crushed stone, and a minerally orange peel lingering finish. YUM! Should have more time to go. — 23 days ago

Napa Valley Cabernet Sauvignon 1998

Double decant for sediment and pour (lots of chunky/fine sediment). A striking still dark ruby red color with bricking. On the nose: wonderful fragrant nose of brambly red fruit, leather, loamy earth, mint, pencil lead. Taste: smooth, elegant wine with dried red fruit, cedar, dried herbs, tar, smokey earth, gravel with a medium plus finish. YUM! Still hanging in there and a pleasure to drink. — 3 months ago

Decant for sediment (lots of chunky/fine sediment) and pour. A stunning medium ruby red color with little signs of aging. On the nose: big inviting notes of dark fruit/currants, worn leather, herbaceous, smoked meat, funky earth, menthol. Taste: silky, evolved, expressive structure with brambly plum, currants, old leather, dark chocolate, graphite, and a black raspberry-iron-dried herb long finish. YUM! It's what's you want in an aged Napa cab, and glad to have just acquired 3 more bottles. — 20 hours ago

I always check my reds (especially if the have any bottle age) for sediment before opening and decant (or rinse bottle and double decant) if there’s any. Sediment can haze the color (whose clarity I enjoy) and can affect texture, especially the last half of the bottle when a non-decanted red with sediment can get progressively grittier. When a tasting note comments on the color being hazy, that tells me nothing about the wine’s inherent quality (unless the notes otherwise indicate a flawed bottle) and instead says to me only that the wine should have been carefully decanted before drinking.

Another tip: I keep a bottle in the fridge to pour decanted sediment dregs into, and use it (except for the muddy bottom part) for cooking. That way my coq au vin or daube is braising in really good stuff from my cellar!

Deep ruby in color with slight brick color on the rim. Nose is quite pleasing with berry compote, lavender, and dark chocolate. Also a bit of earthiness. Wow. A great mouthfeel on this wine. Well balanced with tannins still a bit heavy. That said, I like my wines with a bit more tannic backbone. These notes are from pop and pour taste. Will let it open up a bit and will update if it changes significantly. — 4 months ago

Taste: silky, elegant, savory wine with dried strawberries, leather, cedar, earth, and a peppery chocolate espresso medium plus finish. YUM! On the nose: Terrific notes of musty candied cherry, pine, tobacco leaf, forest floor, little smoked meat. Taste: silky smooth, balanced, elegant wine with blackberry, cassis, earth, minerals, fig, and a long dark chocolate minty finish. YUM! La Guigasse Châteauneuf-du-Pape Grenache 2015

Pop and pour. Notes from 24 hrs open (in the fridge overnight). While this was compelling yesterday, it is glorious today. On the nose: pure lavender, garrigue, soft cola and a touch of sweet incense, wow. On the palate: very good acidity, fantastic density, sweet blackberry, a touch of ash and heat, cola and a surprisingly dark finish, showing a smoldering warmth and very fine tannin. Seems like at least another 3-5 years before peak if this btl is representative. Absolutely gorgeous. — 9 months ago
