Daiginjo…46 % milling rate…(senmai buai)
Bright water white clear in colour.
Nose of bright cantaloupe musk melon.
Flavours of yellow Asian pear, quince and persimmon…(kaki)
This nihon shu is dry but the most impressive feature is the all encompassing creaminess and mouthfeel.
We had local Albacore tuna sashimi with local Matsutake mushrooms cooked in rice from Hokkaido, Japan.

Ok 18 is often used for competition sake and 19 is also a modern yeast with high aromas. The 01 means non-foaming so easier to manage. Per originals.com - “Association Yeast #1801/ 協会1801号酵母

A cross between Association #1601 and #9, this also produces very high levels of ethyl caproate.
With better balance than #1601, this yeast has become a very popular choice for brewing Daiginjo for entry to the Annual Japan Sake Awards. However, as is common with high aroma producing yeasts, it is relatively weak during fermentation, which typically leads to slightly sweeter sake” and “ the super-modern varieties like #1901, a non-foaming variety famous for producing pronounced fruity bouquets.”

Date night prevails once again!

Bae loves this wine. It’s got that nostalgia factor for both of us. I tracked it down and picked up two bottles. We’ll have to get a case when we move in to our new place in a August!

Light flowery bouquet like a sakura. Aromatics of lemon peel and bee pollen.

Bae likes it just as much as before. I think since last having this mosch, I’ve had so much wine ha, and actually believe I’ve grown into liking Guwerztraminer, Rieslings, and Chenin Blancs more and so have a wider palate and reference point. It’s still great, just some of that aha! factor has dwindled.

Love the balance of sweetness, ripe mango, lychees, and medium acidity. Missing the bubbles, though.
