P: Dry…Leather, tree bark, mushrooms, cherries,( but concentrated dried)
These notes before Bolognese, so I’m expecting some change. The mouthfeel and delicato of this mountain Nebbiolo is ridiculous.

Apr 30th, 20232023/2 with white bean, kale and pancetta soup, ruccola and tomato salad, etc. As always, a very different expression of Nebbiolo from those of the Langhe - ethereal, floral. I do think it would be interesting to see how this evolves for several more years.
