Thats one thing about the Bongran, you can decant that for several hours & it continues to improve.

A perfectly decent classic Chablis. Green apples & melon, limestone austerity & salinity.
Starts off quite round, with ripe fruit on the forefront. But the acidity & mineral backbone quickly take over giving this delicious mineral & saline linear purity.
Juicy, savoury, fresh. Perfect with grilled mackerel!
Edit: tasted 6m later, with 10h (natural) decant. This gains in complexity pairing the slightly mushroomy, slightly waxy, Mirabelle infused roundness with the typical chalky razor acidity. This is a really nice one that will clearly gain with age! (Bumping up from 8.9 to 9.0)
