In such a great spot right now after a short decant flaunting signature and classical layers of yellow fruit, an oyster shell minerality and a refreshing sea spray salinity along with a waxy weighty texture that’s cut seamlessly with its racy lemony acids. Great bottle!

I think I prefer Chablis to Côte d'Or white 99 out of 100 times. This was a top example, from a producer who has earned his fame. We served this with lobster risotto made with stock from yesterday's lobster grill up. Everything was concentrated in this wine, especially the washed rind like expression of clay soils and the acidity. The finish fanned out in a classic Burgundian peacocks tail and I can almost still taste it.

Minerally and racy but with delicious ripe, apply fruit and a long long finish. Almost overpowered the Mt. Tam, aged Gruyere and Ribiola Bosina on the cheese board.
