Low(ish) tannins mean that lighter cuts of beef (Filets, petite sirloin) will be its friend, especially with a flavorful rub. Drink now to 2021.

Oct 5th, 2019Deep ruby color and high saturation. Aromas and flavors of bell pepper, blackberry, graphite, leather, pepper, plum, raspberry, sage, and tar. Medium-plus tannins and medium acidity. Complex, structured, and balanced. Pair with red meat to bring out the sweetness and complement the savory and umami flavors of the food. Blend of 76% Cabernet Sauvignon, 14% Merlot, and 10% Syrah. (P.S. my burp smelled like mushroom.)
