Paul Sauer Cabernet Sauvignon Blend

Medium ruby; medium intensity aromas of dried black fruit, black plum, black cherry, black currant, vanilla, baking spices; dry, medium acid, medium plus tannins, high alcohol, medium plus body, medium intensity flavors consistent with aromas; concentrated flavors, flavors not as ripe as aromas

Deep Ruby with slightly lighter ruby edge nose and palate of dark cherry flavours with some vanilla and tobacco flavours
Still maturing but will last a long time.
Great accompaniment to a NY cut steak. Should further mature for a decade or more.

Medium deep , ruby centre and ruby rim . Dark blackberry , spicy tobacco , earthy currants , coffee . On the palate quite dark fruit focused , blackcurrant , blackberry , dark cherry . With time in the glass this seems to show a bit more of the earthy , tobacco notes also present on the nose. Quite high fresh acidity , slightly gritty tannins , quite good tobacco tinged finish . This is showing well now but will age well for a further decade

Pop and pour. Notes from 24 hrs open (unrefrigerated on the counter overnight). On the nose: wild strawberry, sweet tobacco, vanilla and spice. On the palate: elegant and lovely acidity with more sweet strawberry and spicy/sweet tobacco. Soft, velvety tannin on the finish. Excellent already, but will certainly improve with age.

Textbook Perfect steak wine! Big tannins with Dark fruit, charcoal, mint, and earthy notes. Drank with grilled ny strip steak. Excellent!
