
This was special. Initially muted and thin… but then started to wake up… a lot! Sage and mint appeared, then becoming more savory as the hours went on. Decanted. Finished the next night. Last sip was the best. Gives you perspective… aka Cellarius.

At 9 years old this needed to breathe a week. Opened it and the only thing on the nose and palate was alcohol. Have been drinking a few of Stag’s other labels (Fay) from around the same time period and they are drinking much better - still bold and full bodied but with more fruit than alcohol notes.
