Syrah and Cabarnet macerated in direct press Vermentino—all grapes grown in Provence then vinified in Jura. Aged in neutral oak. 0/0. A masterclass in balance. The entire cépage is represented on the palate without any one grape stepping on the other. Joyous with baked ziti and a salad that was actually mostly charcuterie.
