On the palate, rich mouthfeel, citrus, herbs, salinity from the sea, and a finish of herbs (tarragon?) and minerals. Interesting- combo of Chablis and Chardonnay. Etna Bianca- contrada monte Serra 2023. 1st vintage. Never oak only stainless steel for all carricante. Pale oak. Lowest elevation. Near sea level Very ventilated. On the nose, herbaceous, salinity, almonds, and on the palate, sea salt, citrus, tropical fruit, minerality, richness and fullness and more tropical fruit, mango, papaya, florals in the finish. Paired with olive oil.

This wine has a dusty rose color, darker than pink but lighter than red. The nose was a surprise, and not a particularly good one. There was hardly any fruit to speak of at all. The dominant aroma was a funky, barnyard sort of smell. On the palate there were flavors of cherry and Meyer lemon, with a savory overlay and a ton of salinity. If you can get past the first whiff, the taste is a treat. Mine paired very well with a spicy soppressata, some cheese, and an onion focaccia bread. — 11 days ago
