Overview
A brilliantly modern, California-driven interpretation of the classic Passe-Tout-Grains. Instead of the traditional Burgundy blend, this cuvée brings a creative, unrestricted mindset: 40% Pinot Noir, 40% Gamay Noir, and 20% Primitivo, all crafted using carbonic maceration under California sunshine. Vibrant, chillable, and sparkling-adjacent in spirit, this is Carboniste doing what Carboniste does best: turning expectations upside down.

Aromas & Flavors
Juicy raspberry, hibiscus, crushed strawberries, blood orange, and a slight Beaujolais-style candied cherry lift. A playful touch of spice from the Primitivo adds dimension.

Mouthfeel
Fresh, soft, slightly spritzy energy with ultra-light tannins. Bright acidity and a mouthwatering, refreshing finish. Built for chilling, and for fun.

Food Pairings
Korean BBQ, poke bowls, charcuterie, fried chicken, birria tacos, or anything from your “snack dinner” lineup. A perfect wine for warm evenings.

Verdict
An original and wildly delicious California take on PTG. Beaujolais-inspired, but with freedom, sunshine, and Carboniste’s unmistakable signature. Playful yet well-crafted, a total pleasure to drink.

@Delectable Wine : This is the Under the Wire Hirsch Vineyard Blanc de Noir, not a rosé.

I bought this as it was advertised as a rosé, but it’s just a Blanc de noir. Thankfully, it was a tasty mistake.

Killer fruit in the hands of MTP makes for a delicious bubbly. Opened alongside a 2019 Carboniste BdN as a comparison of Cali bubbles, they were on opposite sides of the spectrum. This UTW Hirsch was more big-house in profile whereas the Carboniste had a grower vibe. Pours almost orange in the glass. Fairly yeasty. Honeyed and orange marmalade. There is a perception of semi-high dosage here, but I’m thinking it’s due to how ripe the fruit is. Extremely creamy and layered. I’d be curious to know how these are at release, but this seems to be aging beautifully. Pop for freshness, but it’s not falling off a cliff any time soon.

A boldly creative sparkling wine made out of Albariño 35%, Pinot Gris 35%, Pinot Noir 15% and Chardonnay 15% that stand apart from anything in the traditional bubbles universe. Crafted through skin-contact on white grapes to achieve its gentle orange hue, this cuvée is a perfect example of Carboniste’s forward-thinking, California-driven winemaking. Albariño plays a starring role, injecting electric freshness and coastal vibrancy.

Aromas & Flavors
Mandarin zest, apricot skin, white nectarine, crunchy pear, a floral lift, and a subtle herbal tangerine-pith note. Bright, juicy, and mouthwatering.

Mouthfeel
Zippy, crisp, lightly textural from the skin contact, yet clean and ultra-refreshing. Small-beaded bubbles keep it lively from start to finish.

Food Pairings
Ceviche, sushi rolls, fresh goat cheese, shrimp tacos, citrus-driven salads, or anything enjoyed outdoors.

Verdict
An innovative and endlessly drinkable sparkling orange wine. Fresh, fun, energetic, and unmistakably Carboniste.
