Equilibrio means balance and thatβs exactly what Soumah set out to achieve (and succeeded) when making this wine - a balance between acidity and fruit with no edges.
We enjoyed this $80 bottle in the best way we could - just the two of us (I wouldnβt want to share it with anyone else, Mr Spittoon was actually lucky to get some π), on the couch in my trackies and slippers. It was pure delicious relaxation!
It was like a meal in a glass - so flavoursome and delicious. Utterly smooth and silky and the flavours only got better the more the wine warmed up (as opposed to straight out of the fridge). Right from the beautiful yellow shimmering gold hue, I was in love. Orchard fruits, pastry, citrus and some nuttiness come through on both the nose and in the mouth. Delectable!

You didnβt think this wasnβt making an encore appearance after last weekend did you?
This n/v oxidative leaning styled Champange speaks better to the pairing than the more reductive styled Launois Champagne last weekend. Not that the reductive wasnβt really good. Itβs a yin & yang thing that makes this Champagne pairing more suitable.
What a dessert pair!!! Waited too long to make happen. Make sure you do it during high apple season.
Intermixed sips of 2015 White Burgundy doesnβt hurt either. β 4 years ago
