Really nice and way better on day three being open. A lot of brine and meaty qualities but some good fruit that was even light and tart. Pretty great balance.

Started on the excessive side but gained balance and complexity. Very marked by the regions’ spicy notes. Rich but fresh in the end. Needs time in bottle. 7 to 10 years maybe. We liked it.
