Vouette et Sorbée
Fidéle Brut Nature Champagne Blend
The evenings looser; fresh, spritzy, full of nuts and stone fruit; it was perhaps not fair to drink next to a Jaquesson. Although it pulled of the brut nature part; it was not too dry at all.

Feb 1st, 2019R 14, Disg 5/1/17. About 2.5 yrs since my last btl. On the nose: peach cotton candy, lemon, vanilla, soft almond notes...lovely color. Mousse is a bit aggressive to start, but with some time in the glass softens nicely. On the palate: excellent acidity...the fine mousse makes this seem weightless...srill very hi-toned with a coppery, grapefruit turn. While this is gorgeous on the nose, the palate leans a bit shrill without food. MUCH better with dinner (vegetable stir-fry with soba noodles).

Jan 9th, 2021R17. Fascinating. I’ve never had a wine like this. Definitely needed a few hours of air. Nose and palate actually match pretty well. Almonds, underripe peaches, sherry, brioche, and then the difference in the palate is it hits you with biting acidity to cut through all this. I recently baked some apricot pits and there are similar flavors. Overall this is amazing and highly worth seeking out.
