2021/4/21-22 with pork shoulder Neapolitan alla genovese, busciata di tuminia cacio e pepe, etc. Rich with black cherry, iron and spice, but a nice backbone of acid keeping this fresh and tannin giving structure. I am always suspicious of native Italian varieties that see barriques, but it wasn’t intrusive here - whether due to a deft touch, time or both. — 4 years ago
Is it fun? I’m not sure. Just kidding, this wine is so fun! Drinks like a good video game. Think Mario Kart. — 7 years ago
Wrong listing - not vermentino. Different varietal entirely. Bianchetta Genovese. Surprising. Bottle shop recommended knowing I like acidic and electric wines but not Sauvignon blanc under any circumstances. I get the tropical and salinity people mentioned. Great with dorade. — 3 years ago
Cuvée of Aleatico and Ciliegiolo grape - biological one. Clear pronounced fruits, Sour cherries, fresh raspberry, lightly violett. Complex herbal beside, sage flower, rose. Very gentle, stimulating acidity - Perfect light red
Don‘t overwhelm with complex Food: just pasta / costoluto genovese / fermented red pepper — 5 years ago

2021/4/21-24 with pork shoulder Neapolitan alla genovese, busciata di tuminia cacio e pepe, etc. Pours a yellow gold. This was wonderful on day 1, with lots of bitter almond, beeswax and stone fruit. On subsequent days it felt a little blowsy - perhaps this bottle at this age didn’t need the extra air. — 4 years ago
Obsessed with this wine. Smooth finish, earthy, but light. Complete and versatile. Have paired it with pork and with pesto Genovese successfully. — 6 years ago

Bisson “ü Pastine” Bianchetta Genovese 2023
Portofino DOC, Liguria, Italy 🇮🇹
Overview
A rare white wine made from 100% Bianchetta Genovese, an indigenous Ligurian grape, cultivated in steep coastal vineyards above Portofino. The “U Pastine” bottling highlights winemaker Pierluigi Lugano’s commitment to reviving traditional Ligurian varieties. Fresh, saline, and deeply tied to its maritime terroir.
Aromas & Flavors
Fragrant notes of citrus zest, green apple, white peach, and Mediterranean herbs. Subtle accents of sea spray and crushed rocks give the wine its unmistakable Ligurian identity.
Mouthfeel
Light-bodied, crisp, and energetic with zippy acidity. The finish is marked by a refreshing saline minerality and a delicate citrus lift.
Winemaking Notes
Hand-harvested grapes from terraced vineyards overlooking the sea. Vinified in stainless steel to preserve freshness and purity of fruit. Bisson is also known for the famous Abissi Metodo Classico — a sparkling wine aged in the sea off Portofino — though U Pastine is a still white wine, equally unique in its coastal character.
Food Pairing
Perfect with Ligurian seafood classics — anchovies, branzino, or seafood pasta with pesto. Also excellent with raw oysters, fresh mozzarella, and light salads.
Verdict
A vibrant, terroir-driven Ligurian gem that captures the essence of sea, sun, and stone. Refreshing, honest, and endlessly food-friendly — a must-try for lovers of coastal Italian wines. — a month ago
