Bottled 28 March 2018. Blend no. 42. Season 17/18. Shared by @Bryan Frey for a delicious nightcap and to honor Armand’s passing on 6 March. Just a perfectly balanced, funky, citrusy, earthy lambic. Best before 2038, but there is no way I could get my hands on enough to test that date as they would disappear well before then. — 3 years ago

Château du Cèdre (Verhaeghe et Fils)

Cahors Malbec 2021

One of the bottles we brought back from our stay in the Lot region. Opened 1 hour and 30 minutes before serving. Served over a charcoal grilled super ribeye piece. Great pairing!
Very different take on cahors than the ones we tasted over there. Oak, chocolate, cassis, blackberry, cherry, a menthol thing too. Very inviting and complex. The palate shows a very long acid drive, some nice matter, a soft mouthfeel, some cherry, chocolatey and blackberry notes, some typical grainy, dusty tannins, and a long, everlasting finish with that dusty layer, some cherry, an oaky note reminiscent of the nose and a nice, delicate, savoury touch in the rear, with a very nice pinch of umami to make it great. Less extracted than expected (and than Le cèdre cuvée I had a few years ago), an elegant, modern Cahors. Great stuff!

This one particular cuvée could probably benefit from aging a bit, but a decent amount of air made it very approachable. Of course we had it with charcoal-grilled beef which definitely helped taming down tannins.

If you like aged champagne, this is the beer to try. Tart, funky barnyard notes mixed with fruit. Sour, but balanced. Belgian treat for sure. — 4 years ago

Normally I'm not really a fan of St. Bernardus 12: to heavy and alcoholic. After a few years it loses it's sharp edges and gains more complexity, more chocolatey.
