Could technically qualify as a pet-nat as it only undergoes a single fermentation and is bottled “col fondo” with sediment. Paired with fried cannellini beans and fried kale (Prosecco tempura batter) with parsley, parm, and lemon. Nice dry, acidic cut to slice through the crispy fry. From the Asolo DOCG.
